The flamboyant Chef Victor Hirtzler had a sound career before becoming the chef de cuisine at the Hotel St. Francis. Ilirtzler was late chef of Sherry's and Waldorf, NY Buffet de la Gare, Strasbourg, Alsace, and the Grand Hotel, Paris. He compiled this list of menus and recipes to impress upon the readers of this book the value of intelligent and scientific arrangement and preparation of dishes, with special regard to economy: the maximum nutrition and the maximum appeal to the palate." L'art Culinaire is divided into two parts, Part I being 200 model menus designed for Breakfasts, Luncheons, Dinners and Suppers. Part II contains previously unpublished recipes for which the Hotel St. Francis is famed, written especially for housewives and private cooks. This book contains info for more than two thousand dishes, including beverages and desserts as well. This is the first subscription edition with eight pages of subscribers list. A scarce antique cookbook in very good condition.
