Why steel and not stone?
The secret is the approximately 40 – 50 times better thermal conductivity of steel compared to a fireclay stone. It is she who takes baking to a completely different level. In addition, steel has a lower specific heat capacity.
These two effects cause a much faster heating of the steel compared to a stone and that it also releases the heat to the baked goods much faster.
In other words: The fast amount of heat into the baked goods, an effect that is absolutely desirable, is much higher with a bread baking steel than with a stone / fireclay. A perfect finish with bread or a great bottom with other baked goods is thus guaranteed.
Why no stainless steel?
The thermal conductivity properties of stainless steel are much worse than those of bread baking steel.
