Antique 19thc Wooden French Farmhouse Saucisson Salami Sausage Maker hotsell Stuffer Forcer, Kitchenalia, Rustic Decor

A rare early kitchen appliance for making that uniquely French charcuterie saucisson. Pre war every family in rural France would have kept a family pig and with great ceremony each year the community would come together and help to make every bit of the treasured animal into products to sustain the family throughout the year long before popping down to the supermarket was an option.
The saucisson or salamis were hung and dried to preserve them but before hand something like this would make the forcing of the mixed meat into a casing much easier.
The solid wooden box, beech I think, has a heavy iron corkscrew mechanism and wooden paddle which turns using an iron handle on the outside pushing the mixture through an opening at the end and into a nozzle. The nozzle is hotsell removeable and I believe would have simply been held onto the end to aid feeding into the casing by hand.
The lid has solid iron hinges and two hooks for closure, note one of the hooks is partially broken and it looks as though one of the wooden bars on the base may have been replaced at some point in the past.
The wood has a lovely antique patina, I have lightly waxed it but it could be polished further as required
Measures 40cm by 17cm by 18cm.
